INGREDIENTS
Basic Crumpet
2 tsp (or 7g) instant dried yeast
2 ½ cups plain flour
½ tsp salt
1 Tbsp caster sugar
2 tsp baking powder
2 cups warm water (you may not need it all—see method)
Butter for cooking
Cinnamon Apples
2 large apples, peeled and grated
1 tsp cinnamon
½ tsp vanilla powder
½ cup water
2 Tbsp honey
1 Tbsp butter
To Serve
Greek yoghurt (or yoghurt of choice)
Topping Ideas
Grilled banana + mascarpone
Bacon + maple syrup
Goats cheese + sliced tomato
METHOD
Make the Crumpet Batter
In a jug, mix yeast with 2 Tbsp warm water and set aside for 5 minutes.
In a mixing bowl, whisk together flour, salt, sugar, and baking powder. Gradually mix in warm water—just enough to form a runny, sticky dough (about 144ml used here).
Stir in the activated yeast. Cover and set aside in a warm place for 30 minutes, or until bubbly on top.
Cook the Crumpets:
Heat a heavy-based or non-stick pan over low heat.
Grease the pan and ring moulds (egg rings or small cake rings work well).
Pour about ½ cup of batter into each ring. Cook for about 10 minutes or until the tops are dry and filled with bubbles.
Combine grated apples, cinnamon, vanilla powder, water, honey, and butter in a saucepan.
Make the Cinnamon Apples
Cook over medium heat for 7–10 minutes, or until apples are soft and fragrant.
Serve
Stack your warm crumpets, spoon over the cinnamon apples, and finish with a generous dollop of Greek yoghurt. Add extra toppings if desired.

No ring moulds? Use well-washed empty tuna cans with both ends removed!
