INGREDIENTS

Ricotta Base

250g ricotta

1 tsp vanilla paste

¼ cup icing sugar

Zest of 1 lemon

Pinch of salt

Strawberries

3 punnets strawberries, hulled

Sweet Basil Syrup

½ cup sugar

½ cup water

Handful of fresh basil

To Serve (Optional)

Mini-meringues


METHOD

  1. Make the vanilla ricotta: In a medium bowl, whisk together ricotta, vanilla paste, icing sugar, lemon zest, and salt until smooth and well combined.

  2. Blend the basil syrup: In a small blender, combine sugar, water, and basil. Blend until smooth and the sugar has dissolved.

  3. Assemble the dish: Spoon the vanilla ricotta onto a serving platter. Top with hulled strawberries. Drizzle generously with the basil syrup.

  4. Optional garnish: Add mini-meringues for extra crunch and texture.
